Baked apples are a favorite southern side dish of mine. It wasn't until I gave my Mother a quick call for some tips on extra ingredients to add to this bake, that I learned my Grandfathers favorite dessert was a slice of apple pie topped with melted cheddar cheese.

With the heat of summer quickly approaching, now is the perfect time to use peaches in a cool and refreshing soup like this tree ripened Peachy Keen Soup, dripping with orchard fresh flavor. This sweet summer soup is inexpensive, easy to make, and incredibly versatile. We used it as a cool lunch side dish to go with a sandwich and yogurt, almost like a drink. The chunks of peach in this recipe make it hearty enough for a mid-afternoon snack as well.
