This recipe for Perfect Enchiladas is simple and inexpensive to make for the entire family. Best of all it takes less than 30 minutes. Even better, most of these ingredients you will already have on hand: ground beef, cheese, garlic, onion, etc... Try serving these with chopped green onions, sour cream, shredded lettuce or diced tomatoes. Yum!
*makes about 8 enchiladas
2 lbs ground beef
1/2 medium onion minced (separated in 1/4)
1 can of diced tomatoes & green chilis
8oz sharp cheddar cheese, shredded
4 cloves of garlic, minced
1/2 can of black beans, drained
1 can of green or red enchilada sauce
1 teaspoon salt
1 teaspoon pepper
1 Tbsp. chili powder
8 - 8 inch soft tortillas
1 Tbsp. vegetable oil
Pre-heat oven to 350 degrees.
In a medium frying pan on medium heat, cook the ground beef until brown.
Add 1/2 of your onion and all of your garlic to the frying pan with the ground beef for an additional 3 minutes.
Add the can of tomatoes and green chilis along with the black beans and simmer for 8 minutes.
Add salt, pepper and chili powder to the mixture and incorporate well.
In a separate medium frying pan on low heat, add oil.
Fry tortillas one at a time on each side for 30 seconds. Remove and set aside on a plate.
Add beef and cheese to the center of each tortilla length-wise (about 2 Tbsp. of beef and 1 Tbsp. of cheese, or to taste).

Roll the tortilla with and place opening end down in a rectangular baking dish. Repeat this step for each tortilla.
Pack the rolled tortillas tightly together in the baking dish and top with any remaining cheese and remaining 1/4 diced onions.
Pour Enchilada sauce over the stuffed tortillas and place in the oven for 25 minutes.
Remove from heat and garnish with green onions, lettuce, diced tomatoes or sour cream and serve.
