One of our all time favorite appetizers is the jalapeno popper, a staple on any appetizer plate (sort like our other favorite, mozzarella sticks). This recipe is simple, delicious, inexpensive and tastes much better than the fried version you get at your favorite sports bar (at least in our opinion). 6 to 8 medium sized jalapeno peppers, cut length-wise in half and cored
4oz plain cream cheese softened
1/8 tsp paprika
1/8 tsp salt
1/8 tsp black pepper
1/8 tsp garlic powder
Bread crumbs (we used Mary's Gone Crackers Crumbs)
Preheat over to 325 degrees.
In a small bowl mix cream cheese and all of your spices together well.
Using a spoon, fill each jalapeno pepper half with cream cheese mixture, a little more than level with the top of the pepper.
Top each pepper with a liberal amount of bread crumbs.
Arrange stuffed peppers on a non-stick baking pan and bake for about 10 - 15 minutes (top should brown and cheese will begin to melt slightly.
Remove from oven, place on a plate and serve warm.
We like our jalapeno poppers plain but you might try them with our chipotle cilantro dipping sauce.
*note: wash your hands several times after handling the jalapeno peppers and if you can wear disposable gloves. The oils from the peppers are very hot and if you accidentally rub your eyes it can be extremely painful!
