Flank Steak and Broccoli Over Saffron Ginger Rice

Combine 1 cup brown rice, 2 1/2 cups water, 2 tsp butter, 1 tsp salt, 1 tsp ground ginger, 1/2 tsp black pepper, 1 1/2 tsp turmeric, and 1/2 tsp saffron. 

Allow rice to cook per your rice cookers instructions.


4 cups broccoli steamed until crunchy (we used a microwave steamer)

1 lb flank steak thinly sliced across the grain 

1/2 cup rice flour

2 tsp Old Bay seasoning

2 tsp butter

2 tsp olive oil

1 medium white onion

1 green pepper

1 clove garlic minced

1 - 12oz can diced tomatoes

1 - 12oz can tomato sauce


Mix rice flour and Old Bay seasoning. Coat meat well.

One medium heat in a skillet, melt butter then add olive oil.

Slice onion and sauté in skillet until soft and brown.

Add green pepper and minced garlic.

Add meat, sauté until browned.

Add diced tomatoes and tomato sauce and bring to bubble. 

Reduce heat to low and simmer uncovered until sauce thickens. 

Mix steamed broccoli with meat mixture.

Serve on top of rice.
