There's no greater way to show someone you love them than through food. The sentiment of love through food often comes in the form of sweets.... sweets for your sweetheart, sweetie, sugar bear, honey bun.... Even more so, that sentiment is carried to a deeper level with chocolate! So when dreaming up a gift for that special someone in my life I decided what's better than cake, a cherry chocolate cake at that (thanks Auntie!).
This decadent, dark, and delicious dessert has the rich flavors of cocoa, vanilla, cherry, and a kick of coffee inside. I even decided to include a few sweet surprises in the cake by adding maraschino cherries. This cake is normally made with eggs but our version replaces the eggs with bananas due to a food allergy.

2 cups cake flour
1 1/2 tsp baking soda
1/2 tsp salt
3/4 cup powdered cocoa
1/2 cup brown sugar
3/4 cup white sugar
2 bananas (original recipe calls for 2 eggs)
1/4 cup melted butter
1/2 cup sweet pure cherry juice
1/2 cup cold brewed concentrated coffee (we used Cool Brew Chocolate Almond)
2 tsp pure vanilla extract
In a mixing bowl, thoroughly mix together flour, baking soda, salt, powdered cocoa, and sugars using a hand whisk.
Using a mixer, combine your above mixed with your bananas, butter, cherry juice, coffee, and vanilla. *TIP: if you are using bananas instead of eggs, mash your bananas well before mixing them in to your batter. Be sure your batter is mixed well.
Pre-heat your oven to 350 degrees.
Spray a 9 x 13 baking pan with non-stick spray and pour in your batter, evenly cover the bottom of the pan.
Drop your maraschino cherries throughout the better and let them sink on their own. We added about 12 cherries evenly spread throughout.
Bake your cake for approximately 45 minutes. Check the middle of your cake with a cake tester, it should come out clean.
Let your cake cool completely, then add your icing on top. We used a cream cheese icing on our cake. If you want to make your own cream cheese frosting, we have a recipe on our site HERE.
Cut cake in to squares at the size you prefer and serve with a maraschino cherry on top. Enjoy!
