I'm always looking for healthy new recipes to serve as appetizers for small get togethers, dinner parties, or just a night of gaming with friends. This is an amazing recipe for avocado lovers and when combined with our chipotle sauce for dipping it's a delicious mouthful of spicy yum!
The added bonus is it's another great way to prepare avocados, one of our favorites!
1/4 cup all purpose flour
1/2 tsp salt
2 tsp fresh chopped parsley
1/4 tsp ground cumin
1/4 tsp black pepper
1/4 cup olive or coconut oil (we use Holman Ranch Olive Oil or Carrington Farms Coconut Cooking Oil) *NOTE: the original recipe calls for 2 eggs beaten, we used oil instead because a guest had a food allergy!
1 cup plus bread crumbs (we used Mary's Gone Crackers Crumbs)
2 medium, firm, ripe avocados, peeled and sliced in to wedges
1/2 lime (*optional)
Preheat your oven to 400 degrees.
In a shallow dish combine flour, salt, parsley, cumin and pepper.
In another shallow dish place your oil.
In another shallow dish place your breadcrumbs.
Dip avocado wedges in flour mixture and coat well (shake off any excess).
Dip slices in to oil, then coat in breadcrumbs.
Arrange wedges on a non-stick baking pan and bake for approximately 10 minutes at 400 degrees or until brown.
*Serve with chipotle dipping sauce (recipe HERE) and a fresh half lime for squeezing to taste on wedges.
