We eat an incredible amount of granola here at Real Food Real Kitchens. When our friend and brother Brad Chapman gave us this recipe we were incredibly excited to try it out. We can now make our own granola: cereal, parfait, trail mix and other great snacks with this simple recipe. We used our first batch to make a fresh berry parfait with blackberries and blueberries. 2 cups old fashion rolled oats
1 cup sweetened shredded coconut
1/2 cup slivered almonds
1/2 cup chopped walnuts
1/4 cup dried cherries, chopped
1/4 cup dried cranberries
1/4 cup vegetable oil
1/4 cup honey
1 teaspoon cinnamon
Preheat oven to 350 degrees.
Toss oats, coconut, almonds, walnuts, cherries and cranberries in a large bowl. Drizzle vegetable oil and honey over the mixture. Sprinkle in cinnamon and stir the mixture with a wooden spoon. Spread the mixture on a 13x9 non-stick baking sheet and place in preheated oven for 25-30 minutes, stirring occasionally until mixture is golden brown.
Serve with yogurt and fresh fruit, such as blueberries, raspberries, strawberries and blackberries. Layer the granola and fresh fruit with your favorite yogurt and chill to make a parfait. All delicious uses for granola!
