Healthy Chicken Tacos Recipe
Who needs a new years resolution to get healthy? It's all about making healthy choices, and anytime is a good time to start doing that. Our friend Heather and her family have been kicking some serious butt in the gym lately and making flavorful healthy recipes at home, like this one for chicken tacos she recently shared with us. She also made a spicy cucumber salsa to top off the tacos.
Very few, simple ingredients make for delicious tacos that clock in at around 143 calories each! Wow! Thank you Heather!!!
TACO FILLING INGREDIENTS
Pre-cooked rotisserie chicken breasts (2 breasts per taco seasoning packet)
1 packet of your favorite taco seasoning (1 to 1.25oz packet)
cayenne pepper to taste
black pepper to taste
DIRECTIONS
Mix taco packet in water according to package, bring to a boil.
Place chicken in and then reduce heat to a simmer.
Shred the chicken until it is completely shredded.
Add cayenne and black pepper to taste.
Let simmer for several minutes until chicken is hot and sauce begins to reduce.
CUCUMBER SALSA INGREDIENTS
1 large cucumber, chopped into small cubes
jalapeno pepper chopped, add to taste
cilantro chopped, add to taste
1/2 lime
DIRECTIONS
Add all of your ingredients except lime juice to a small bowl.
Stir ingredients until well mixed.
Squeeze fresh lime juice over top
For the tortillas, Heather used yellow corn tortillas. She sprayed a non-stick pan with 100% olive oil spray and then cooked the tortillas on medium heat on both sides until a bubble begins to form.
You can top each taco with extra lime juice and hot sauce if you'd like. Enjoy!
