These bite sized snacks are inspired by our 'New England Comfort Food' episode of Real Food Real Kitchens. Guest Kevin's Mom would make cauliflower cheese bites in order to get him to eat his vegetables. It obviously worked well because to this day he still makes them along with many other traditional family dishes.
Our version is even easier to make than his! Three simple ingredients and you have delicious, cheesy broccoli bites that even the biggest vegetable hater in your family will love!
Cheddar cheese (we like extra sharp!)
Frozen broccoli florets
Thin crust pizza dough (we used Pillsbury)
Pre-heat oven to 400 degrees
Un-roll pizza crust as instructed by directions on the package.
Use a cup, glass, etc... to cut approximately 3" circles in the dough.
Place one broccoli floret and one or two cubes of cheese in the middle of each circle.
Pull the dough up on all sides around your fillings and squeeze tightly to close. This will make a pocket of dough around your broccoli and cheese.
Place each bite in a cup in a non-stick muffin sheet.
Place sheet in the center of the over and bake for approximately 10 minutes or until your dough begins to brown.
Remove from oven. Let cool for about 5 minutes.
Serve bites with marinara sauce or any kind of your favorite dipping sauce.
