A Peachy Keen Soup & Container

With the heat of summer quickly approaching, now is the perfect time to use peaches in a cool and refreshing soup like this tree ripened Peachy Keen Soup, dripping with orchard fresh flavor. This sweet summer soup is inexpensive, easy to make, and incredibly versatile. We used it as a cool lunch side dish to go with a sandwich and yogurt, almost like a drink. The chunks of peach in this recipe make it hearty enough for a mid-afternoon snack as well.


1 lb peaches (about 3 large, peeled and diced)
¾ cup pineapple juice
½ cup of freshly squeezed orange juice
2 tbsp sugar
¼ cup of pineapple chunks
1 tbsp lemon juice
¼ tsp cinnamon
1-6 oz. carton vanilla yogurt

A peachy keen lunch!

Reserve ½ cup of peaches. Place remaining ingredients in blender and blend until smooth. Pour equally into bowls, thermoses, mugs… whichever is best fit for how you are serving your Peach Soup. Stir into peach mixture. Cover and refrigerate. Garnish with ½ cup reserved peaches and a sprinkling of cinnamon.

You can also eat this as an accompaniment to grilled chicken or pork with an organic salad on the side. You can use it as a base for a smoothie or transform breakfast oatmeal into something special by using the soup in place of milk or cream. And, if you want to remove that healthy halo for one evening, transform the soup into a refreshing adult beverage with a bit of vodka or rum! The possibilities are endless!
