Simple combination salads are perfect for summer picnics. They are easily pre-made and transportable in mason jars and can be shared or enjoyed individually. The key to creating these salads is using fresh, in-season, summer ingredients, tossed lightly with a simple oil, vinegar, and herb dressing. Some simple sample salads we made were: roasted beets with feta cheese & mint leaves; thinly sliced radish with onion, cucumber & dill; shredded red cabbage with sliced white onion; garbanzo beans, pecans, finely chopped onion, corn, and Gorgonzola cheese... and more.
You can pick and choose your favorite ingredient combinations and use this general recipe as a guideline to making your salads.
SIMPLE SUMMER SALADS
2 cups of your favorite summer salad ingredients (beets, feta cheese, mint, cabbage, radish, onion, chickpeas, potatoes, etc...)
Oil & Vinegar herb dressing (recipe below)
Put the 2 cups of your favorite summer salad ingredients in a 16 oz. mason jar (we used Ball mason jars).
Pour in your oil & vinegar herb dressing. Close the top tightly and shake to mix your ingredients. Place in your refrigerator until you are ready for your picnic. You can eat salads right out of the jar.
OIL & VINEGAR HERB DRESSING
2 tbsp olive oil
2 tsp balsamic vinegar
1 to 2 pinches of your favorite herb mix (we used Gustus Vita 'Taste of California')
salt & pepper to taste
Mix all of your ingredients in a small bowl or measuring cup. Pour over your salad in the mason jar.
