Creating an apple and cheddar cheese bake seemed like a no brainer dish to make. I eat sliced apple with cheese or peanut butter or Nutella on a daily basis for a snack. Baked apples are a favorite southern side dish of mine. So combining the two ideas seemed like a magical idea.
It wasn't until I gave my Mother a quick call for some tips on extra ingredients to add to this bake, that I learned my Grandfathers favorite dessert was a slice of apple pie topped with melted cheddar cheese. An awesome coincidence that makes this dish even more magical for me.
So here is a simple and crust less version of an apple cheddar bake with a little help from Mom and soulful inspiration from Grandpa. Improvise, have fun, and enjoy the deliciousness!
1 large red apple, cubed
2 tsp lemon juice
1/4 cup brown sugar
2 - 4 medium slices of sharp cheddar cheese (you can add more to your tatste, we like a lot of cheese so we added more).
Mix cubed apple, lemon juicem and brown sugar in a bowwl and make sure everything is coated. We then separated ours in to 4 small side dish over-proof bowls, topped them with a slice (or two) of extra sharp cheddar cheese and baked them at 350 degrees in a toaster over. We baked them for about 10 minutes or until the cheese on top was melted and golden brown.
You could also make this bake in an over proof small casserole dish in an oven set at 350 degrees. Same technique applies to just watch them and cook until cheese is melted and golden brown.
It's a sweet, savory, and melty delight!
