If you're like us here at Real Food Real Kitchens, time is something we always lack. One would think that since we are making delicious food all day in the RFRK kitchen that we'd all be pretty well fed. True as that is, if we always ate what we made here in the kitchen, we'd all weigh about 50 extra pounds... so keeping a balanced diet is sometimes even more difficult. So we came up with this quick and simple blue cheese pasta dish and kept it light, filling, and super easy to make. We hope this simple dish might make family meal time a little bit easier on your this week.
note: this recipe is just enough for 2 adults. Just double up to make enough for 4, and so on for more.
4 oz Penne pasta
14 oz diced tomatoes (we used Dei Fratelli)
2 tbsp olive oil
2 cloves garlic minced
2 leaves fresh basil shredded
Hand-full of fresh spinach (more or less to taste)
salt & pepper
Cook pasta al dente according to its instructions, strain and set aside.
In a large frying pan add olive oil over medium heat.
Add in garlic and cook for approximately 2 minutes.
Add in diced tomatoes and pasta and cook on medium head for about 5 to 10 minutes.
Add salt & pepper to taste.
Stir in spinach leaves and cook until wilted and covered in sauce.
Last, add in fresh basil and cook for another minute or two.
Serve in a bowl and sprinkle blue cheese over top to taste (we used a large pinch). Delicious!
