One of our favorite ingredients that we often think gets overlooked during the Holidays is fruit. That's why we are so thankful when we get recipes like this Apple and Cranberry Salad sent to us by Julie Fuller from Melbourne, FL . Not only is it delicious, healthy, and a great meal by itself, it's also customizable and uses many of the leftover ingredients from holiday dinners.

3 chopped Fuji apples
2 stalks chopped celery
1/4 cup raisins or cranberries
1/4 cup chopped pecans
1 to 2 tbs crumbled Gorgonzola
Juice of 1/3 lemon
1 cup plain yogurt
1 tbs raspberry vinaigrette
1 tbs agave nectar
Mix all ingredients well (except the Gorgonzola).
Add Gorgonzola crumbles on top.
Toss, chill & serve on watercress or greens of your choice.
