HYDROPONIC PRODUCE - Spinach Salad Recipe
This weekend Real Food Real Kitchens made a trip out to the new and beautiful Liberty Farms of Florida in Grant-Valkaria, FL. We came home with a delicious bag of full leaf spinach that was so tasty we could have eaten it raw, and several beautiful stems of green onion. We incorporated the two, along with some other ingredients, in to an amazing salad (recipe below) that was simple to make and took only about 10 minutes.
Liberty Farms of Florida provide ultra-fresh hydroponic produce that is harvested the day you pick it up. You can join their Community Supported Agriculture program for $25 per week which gets you one 16 quart basket full of a variety of produce and herbs (whatever is in season at the time). REAL FOOD REAL KITCHENS SPINACH SALAD
Several large leaves of whole leaf spinach to taste (we like a lot of spinach)
1 stalk of green onion chopped
shredded or crumbled cheese to taste (we used Gouda)
1 patty Morning Star Farms 'Italian Herb Chik Patty' cut in to strips (cooked, directions on box)
Small handful of Ocean Spray reduced sugar Craisins
Small handful of Sun-Maid golden raisins
1/4 cup or to taste balsamic vinaigrette of choice (we used Publix brand)
Drizzle to taste of Golden Blossom Honey
Pinch of William Bounds Celtic Light Grey Sea Salt
Fresh cracked William Bounds Five Pepper Blend peppercorns to taste
Make a bed of spinach in the bottom of a medium sized bowl.
Add chopped green onion, cheese, 'Italian Herb Chik Patty', Craisins, and raisins. Do not toss!
Lightly cover ingredients with balsamic vinaigrette then drizzle with honey.
Add salt & pepper and serve.
