Zucchini is a summer squash that is cleaned and grated then added to a semi-sweet bread that is filled with aromatic spices like nutmeg and cinnamon… sort of like a banana bread. Anyhow, we love the stuff and since it’s National Zucchini Bread day we’ve sourced out this recipe to celebrate!
½ cup all-purpose flour
1- teaspoon of cinnamon
½ teaspoon of baking soda
¼ teaspoon of baking powder
¼ teaspoon of salt
¼ teaspoon of ground nutmeg
1 cup of granulated sugar
1 cup of finely grated zucchini
¼ cup of vegetable oil
¼ teaspoon finely shredded lemon zest
Grease the bottom of a loaf pan with butter so the bread doesn’t stick
In a large mixing bowl, combine the flour, baking soda, baking powder, salt and nutmeg and mix
In another bowl combine the remaining ingredients
Pour the wet ingredients into the dry ingredients and mix together until it becomes a smooth batter.
Pour batter in to your loaf pan and bake 55-60 minutes at 350 degrees until toothpick inserted near center comes out clean. Remove from the oven and cool in the pan on a heat proof surface for 10 minutes. Remove from pan. Cool completely.
