Pumpkin pumpkin everywhere! From pumpkin latte's at your favorite coffee shop to pumpkin eggnog. The Fall is the time of year we all get the fever for the flavor of pumpkin! Below is our version of delicious vegan (before the frosting) pumpkin muffins. Just one will get you done and cure that pumpkin-y craving for the day.
PUMPKIN MUFFINS (Egg-less & Vegan)
*makes 12 large muffins
3 1/2 cups of flour
2 cups of brown sugar
1/3 cup Steviva Blend
2 tbsp baking soda
1 tbsp salt
1 tbsp ground nutmeg
1 tbsp ground cinnamon
1 cup vegetable oil
2/3 cup chcolate soy milk
1 15oz. can of pumpkin
1/2 a banana
2/3 cup raisins (these are optional, more or less to taste as well)
In a medium bowl mix together your dry ingredients (we used a Kitchenaid 'Classic' electric mixer) until well mixed.
Slowly add in your wet ingredients in the order they are listed. Continue mixing until batter is smooth.
Pre-heat your over to 350 degrees.
Spoon batter in to baking cups placed in a muffin tin (we used PaperChef Culinary Lotus Cups).
Once you have filled them about a quarter inch from the top, place them on the middle rack inside your oven.
Bake for approximately 30 minutes. Check after 20 minutes by placing a toothpick in the middle of a couple of muffins. If the toothpick comes out clean your muffins are done. If not let them bake for the additional 10 minutes and check them again.
Once cooked, remove them from the oven and let cool. You can enjoy them plain or add cream cheese frosting which is what we did. That recipe is below.
CREAM CHEESE FROSTING
*note if you use this cream cheese frosting, your muffins will become un-vegan
*this will make enough to generously spread on to all 12 of your muffins.
8 oz cream cheese
1 stick of unsalted butter
1 tbsp vanilla extract
2/3 cup Steviva Blend (*note: If you prefer a creamier frosting use 1 1/2 cups powdered sugar)
1/3 cup powdered sugar
Mix ingredients in order into a medium bowl (if using an electric mixer like we did, mix your ingredients on slow speed. We again used a Kitchenaid 'Classic' electric mixer).
Once ingredients are blended and smooth spread on to the top of your muffins to taste.
