Triggerfish Chowder With Strawberry Shortcake

The Gast Family treat us to some fresh Florida seafood with this Triggerfish chowder recipe, chock full of ocean fare. The Mom, Chris, steps in to show us a simply sweet recipe for fresh Florida strawberry shortcake, A perfect meal!

TRIGGERFISH CHOWDER

INGREDIENTS

3 medium potatoes, cubed

1 large onion, chopped 

1 Tbsp. garlic, minced

2 medium carrots, chopped

1 1/2 lb triggerfish, cut in to pieces 

1 lb shrimp peeled, cut in to pieces 

1 large lobster tail, cut in to pieces

2 6.5 oz cans of clams, one can needs to be drained

2 cups shredded Mexican cheese

1 tsp pepper

1 tsp salt

1 Tbsp. Bad Byron's Butt Rub or BBQ/Cajun seasoning

1/2 stick butter

 

DIRECTIONS

Pre-cook potatoes, onion, garlic, and carrots in a frying pan with 1/4 stick of butter and 1/2 Tbsp. seasoning until tender. Transfer to large pot on medium heat.

Pre-cook Triggerfish, shrimp, and lobster with 1/4 stick butter and 1/2 Tbsp. seasoning for a few minutes. Transfer to large pot on medium heat.

Keep pot on medium heat and add milk until the desired thickness is reached.

Stir in clams and cheese.

Allow ingredients to meld and transfer flavors for about 30 minutes while keeping just under a boil.

Add additional seasoning, salt and pepper to taste. Serve with Soup Crackers and enjoy!

STRAWBERRY SHORTCAKE

INGREDIENTS

32 oz. fresh strawberries

2 cups flour

2 Tbsp. sugar

1 Tbsp. baking powder

1 cup milk

1 stick of butter

2 additional Tbsp. sugar

 

DIRECTIONS

Slice the strawberries in to quarters and sprinkle with 2 Tbsp. sugar in a bowl.  Set Aside.

Mix flour, additional 2 Tbsp. sugar and baking powder in a bowl. Cut the butter into your flour mixture with knives until the pieces of butter are pea sized.

Add milk and lightly mix just until ingredients are wet. If you would like, add a few pieces of your strawberry mixture to the dough now for color.          

Roll out dough and cut with biscuit cutter, sprinkle tops with some additional sugar.

Bake at 375 degrees for approximately 10 minutes.

Top each biscuit with strawberry and sugar mixture and whipped cream (*see recipe below). Enjoy!

 

WHIPPED CREAM

INGREDIENTS

2 cups heavy whipping cream

4 Tbsp. sugar

1/2 tsp vanilla extract

DIRECTIONS

Place sugar and heavy cream in to a mixing bow.

Whip till peaks start to form.

Serve immediately.
