George’s Southern Shrimp n Grits are out of this world! His laughter and love fill the kitchen as he generously prepares this family dish, one his father passed on to him. Don’t forget to add ‘nature’s candy!’.
2 Tbsp. vegetable oil
6 strips of bacon
3 Tbsp. diced onion
1/2 tsp of minced garlic
20 medium to large shrimp, peeled and deveined, with tails on
1/4 cup orange juice
1 cup heavy cream
1/2 cup of bbq sauce
1/4 tsp of Worcestershire sauce
1/4 cup of blackening seasoning
1/4 tsp salt
1/4 tsp black pepper
4 servings grits, cooked according to package directions
Chopped Parsley or scallions for garnish
Cook grits per directions on package, set aside and keep warm.
Chop bacon into small strips then cook in a large skillet, coated with oil, on medium heat until crisp. Remove bacon to a plate lined with paper towels and set aside.
Remove 1/2 of the bacon fat from the pan then add the onion and cook until translucent.
Add garlic and a teaspoon of blackening season.
Once the garlic is fragrant, add the shrimp and season with Worcestershire sauce and the remaining blackening seasoning.
Add the orange juice, bbq sauce and heavy cream. Cook until creamy then add cooked bacon to sauce.
Adjust sauce with seasoning and salt and pepper.
In a bowl spoon the sauce and shrimp over the grits. Garnish with parsley or scallions and enjoy!
