Quan shares a recipe he learned from his Vietnamese Aunt. Goi Cuon, a spring roll filled with fried fish, boiled shrimp, and served with a peanut sauce.
FISH SAUCE INGREDIENTS
1 to 2 cloves monced garlic
1/2 tbsp chili paste, or 2 fresh chili peppers seeded and minced
4 tbsp sugar
4tbsp apple cider vinegar
11 small fresh lime juiced
1 cup water
5 tbsp fish sauce
Combine all of the above ingredients adding the fish sauce last (this will cause the garlic and peppers to float). Stir very well!
PEANUT SAUCE INGREDIENTS
1 tbsp of the previously made fish sauce
3 tbsp Hoisan sauce
toasted, chopped peanuts to taste
Toast peanuts in a dry pan on medium heat, turning constantly until they start to brown, approximately 10 minutes. You can chop or crush your roasted peanuts in a zip lock bag gently using a meat tenderizer or similar object. Mix all of the ingredients in a small dipping bowl.
